NUTRITIONAL RECIPIES

Hot Cereal Mix
6 cups Quick Oats or combine a variety of quick grain flakes (wheat, rye, rice, etc.)
2 tsp. Cinnamon
1 cup Sucanat
1 tsp. Salt
2 cups Raisins
1 cup Chopped Dried Apples
1 cup Nuts or Sunflower Seeds (Optional)
Bring 4 cups of water to a boil. Add 2 ½ cup mix. Bring to a boil, reduce heat and simmer 2 minutes. Reduce heat and let stand 3 minutes. Seve with the milk of your choice.
Basic Muffin Mix
5 cups Whole Wheat Flour
2 cups Oat Bran or Quick Oats
5 cups Unbleached Flour
3 tsp. Cinnamon
1 tsp. Nutmeg
6 tsp. Baking Powder
2 tsp. Baking Soda
To Make 18 Muffins
3 cups Basic Muffin Mix (See Recipe Above)
1/2 cup Oil (Canola, Olive or Better Butter)
1/2 to 1 cup Sweetener (Sucanat, Honey, Maple Syrup, or your favorite)
1 cup Fruit or Vegetable (Pineapple, Apple, Carrot, Zucchini, Sweet Potato, Banana, Berries, Apple Sauce or your favorite imagination)
1/2 to 1 cup Liquid as needed for texture (Skim Milk, Rice Milk, Soy Milk, Juice or Yogurt)
1to 2 Egg(s)
1/2 to 1 cup Nuts, Raisins, Seeds or other Dried Fruit
Combine all ingredients. Do not overmix. Bake at 350 degrees for 20-25 minutes.
Basic Biscuit Mix
6 cups Whole Wheat Pastry Flour
6 cups Unbleached Flour
12 tsp. Baking Powder
4 tsp. Salt
Basic Biscuits
4 cups Basic Biscuit Mix (See Recipe Above)
1/2 cup Milk (rice, soy or buttermilk)
1/2 cup Butter or Oil
Cut butter into biscuit mix. Add milk. Knead lightly. Roll out. Bake.
Cinnamon Biscuits
4 cups Basic Biscuit Mix (See Recipe Above)
1/2 cup Milk (rice, soy or buttermilk)
1/2 cup Butter or Oil
1 tsp. Cinnamon
1/2 cup Raisins
1/2 tsp. Vanilla
Cut butter into biscuit mix. Add milk. Knead lightly. Roll out. Bake.
Cinnamon Rolls
4 cups Basic Biscuit Mix (See Recipe Above)
1/2 cup Milk (rice, soy or buttermilk)
1/2 cup Butter or Oil
1 tsp. Cinnamom
1/2 cup Raisins
1/2 cup Nuts (Walnuts or Pecans)
1/4 cup Honey or Maple Syrup
Cut butter into biscuit mix. Add milk. Knead lightly. Roll out into an oval. Sprinkle with cinnamon, raisins, nuts and drizzle with honey or maple syrup. Roll up into jelly roll fasion. Slice ¾ inch pieces. Bake at 350 degrees for 20-25 minutes.
Pizza Crust
4 cups Basic Biscuit Mix (See Recipe Above)
1/2 cup Milk (rice, soy or buttermilk)
1/2 cup Butter or Oil
1/2 tsp. Garlic
1/2 tsp. Pizza Seasoning or Italian Seasoning
1/3 cup Parmesan Cheese or Soy Parmesan Cheese
Roll out to desired size. Top with sauce and your favorite toppings (Yves vegetarian pepperoni is great!!) Bake 20-25 minutes.
